Ingredients

  • 2 medium zucchinis, sliced
  • 1 cup cooked rice
  • 1 package stuffing mix
  • 2 cups vegetable broth
  • 1 cup shredded cheese (optional)
  • 1 onion, diced
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • 1 tablespoon olive oil

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Heat the olive oil in a skillet over medium heat, then sauté the onion and garlic until soft.
  3. Combine the sautéed onions and garlic with the sliced zucchini, cooked rice, and vegetable broth; stir until mixed.
  4. Pour this mixture into a greased baking dish, spreading it evenly.
  5. Sprinkle the stuffing mix over the top, adding cheese if desired.
  6. Bake for 25-30 minutes, or until the top is golden brown.
