Instructions
- Preheat the oven to 350°F (175°C).
- Heat the olive oil in a skillet over medium heat, then sauté the onion and garlic until soft.
- Combine the sautéed onions and garlic with the sliced zucchini, cooked rice, and vegetable broth; stir until mixed.
- Pour this mixture into a greased baking dish, spreading it evenly.
- Sprinkle the stuffing mix over the top, adding cheese if desired.
- Bake for 25-30 minutes, or until the top is golden brown.
