Ingredients

- 12 oz cheese tortellini
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1/2 red onion, finely chopped
- 1/2 cup Kalamata olives, pitted and sliced
- 1 cup feta cheese, crumbled
- 1/4 cup olive oil
- 2 tbsp red wine vinegar
- 1 tsp dried oregano
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Cook the tortellini according to package instructions. Once cooked, drain and let it cool.
- Combine the cooled tortellini, halved cherry tomatoes, diced cucumber, red onion, olives, and crumbled feta cheese in a large bowl.
- Make the dressing by whisking together olive oil, red wine vinegar, oregano, and seasoning with salt and pepper.
- Toss the dressing over the salad and mix gently to combine all the flavors.
- Garnish with fresh parsley just before serving. Enjoy!
