Description

A vibrant and refreshing salad with cheese tortellini, fresh vegetables, and creamy feta, perfect for any gathering.


Ingredients

  • 12 oz cheese tortellini
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 red onion, finely chopped
  • 1/2 cup Kalamata olives, pitted and sliced
  • 1 cup feta cheese, crumbled
  • 1/4 cup olive oil
  • 2 tbsp red wine vinegar
  • 1 tsp dried oregano
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Cook the tortellini according to package instructions. Once cooked, drain and let it cool.
  2. Combine the cooled tortellini, halved cherry tomatoes, diced cucumber, red onion, olives, and crumbled feta cheese in a large bowl.
  3. Make the dressing by whisking together olive oil, red wine vinegar, oregano, and seasoning with salt and pepper.
  4. Toss the dressing over the salad and mix gently to combine all the flavors.
  5. Garnish with fresh parsley just before serving. Enjoy!
