Description

A creamy, mildly spicy Peruvian chicken dish that pairs beautifully with rice and plantains.


Ingredients

  • 1.5 pounds boneless, skinless chicken thighs or breasts
  • 1 tablespoon olive oil, plus extra for sautéing
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 3 tablespoons aji amarillo paste
  • 1 medium yellow onion, finely diced
  • 3 garlic cloves, minced
  • 1/2 cup chicken broth
  • 1/2 cup heavy cream or evaporated milk
  • 1 teaspoon ground cumin
  • Optional: 1/4 teaspoon sugar
  • Fresh cilantro, chopped (for garnish)
  • Cooked white rice or quinoa (for serving)
  • Fried plantains (for a side)

Instructions

  1. Season the chicken thighs with salt and pepper, allowing them to sit for about 10 minutes.
  2. Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Once hot, add the chicken pieces, cooking until they’re golden brown, approximately 4-5 minutes per side. When done, remove the chicken and set it aside.
  3. In the same skillet, toss in the diced onions. Sauté until they become translucent, then add minced garlic and ground cumin. Cook until fragrant, around 1-2 minutes.
  4. Stir in the aji amarillo paste, cooking for an additional 2 minutes. Pour in the chicken broth, making sure to scrape up any browned bits from the skillet to enhance the flavor.
  5. Add the heavy cream (or evaporated milk) and stir until the mixture is smooth. Let it simmer for about 5 minutes.
  6. Return the chicken to the skillet, spooning the sauce generously over it. Allow everything to simmer together for another 5 minutes, letting the flavors meld beautifully.
  7. Garnish with freshly chopped cilantro before serving.

Notes

For a vegetarian option, substitute chicken with firm tofu. Consider adding jalapeños for more heat.
