- 1 cup all-purpose flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1/4 teaspoon salt
- 1/3 cup coconut oil, melted
- 1 cup sugar
- 1/4 cup almond milk
- 1 tablespoon lemon juice
- 1 teaspoon lemon zest
- 1 teaspoon vanilla extract
- Powdered sugar for dusting
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Whisk together the flour, baking powder, baking soda, and salt in a bowl until well combined.
- Mix the melted coconut oil and sugar in another bowl until the mixture is smooth.
- Add almond milk, lemon juice, lemon zest, and vanilla extract to the coconut oil mixture, stirring until smooth.
- Fold the dry ingredients into the wet mixture until just combined (don’t overmix).
- Scoop tablespoon-sized amounts of dough and roll into balls, then roll in powdered sugar until coated.
- Place them on the prepared baking sheet with space between each cookie.
- Bake for 10-12 minutes until the edges are lightly golden and the centers remain soft.
- Let cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
Notes
For thicker cookies, chill the dough balls for 30 minutes before baking. Measure flour correctly to avoid dry cookies.
