Ingredients

  • 1/3 cup coconut sugar
  • 1/2 cup almond milk
  • 1/3 cup coconut oil
  • 1 Tbsp strong brewed coffee, cooled
  • 1 tsp vanilla extract
  • 23 tbsp chopped hazelnuts
  • 23 tbsp chocolate chips (optional)

Instructions

  1. Prepare the dry mix: Sift together the flour, baking powder, and salt in a large bowl.
  2. Add sweetness: Stir in the coconut sugar until well combined.
  3. Mix the wet ingredients: In a separate bowl, whisk together the coconut oil, almond milk, cooled coffee, and vanilla extract.
  4. Combine mixtures: Carefully fold the wet mixture into the dry ingredients.
  5. Add the crunch: Fold in the chopped hazelnuts and chocolate chips.
  6. Chill the batter: Cover and refrigerate for at least 2 hours.
  7. Preheat your oven: When ready, preheat to 200°C (392°F).
  8. Prepare molds: Grease and flour your madeleine molds.
  9. Fill and bake: Spoon the batter into the molds, filling them about three-quarters full. Bake for 12-15 minutes.
