- 1 tsp baking powder
- 1/8 tsp salt
- 1/3 cup coconut sugar
- 1/2 cup almond milk
- 1/3 cup coconut oil
- 1 Tbsp strong brewed coffee, cooled
- 1 tsp vanilla extract
- 2–3 tbsp chopped hazelnuts
- 2–3 tbsp chocolate chips (optional)
Instructions
- Prepare the dry mix: Sift together the flour, baking powder, and salt in a large bowl.
- Add sweetness: Stir in the coconut sugar until well combined.
- Mix the wet ingredients: In a separate bowl, whisk together the coconut oil, almond milk, cooled coffee, and vanilla extract.
- Combine mixtures: Carefully fold the wet mixture into the dry ingredients.
- Add the crunch: Fold in the chopped hazelnuts and chocolate chips.
- Chill the batter: Cover and refrigerate for at least 2 hours.
- Preheat your oven: When ready, preheat to 200°C (392°F).
- Prepare molds: Grease and flour your madeleine molds.
- Fill and bake: Spoon the batter into the molds, filling them about three-quarters full. Bake for 12-15 minutes.
- Cool and enjoy: Let them cool on a wire rack.
