Ingredients

- 1 cup sun-dried tomatoes, chopped
- 2 cups kale, chopped
- 4 cups vegetable broth
- 1 onion, diced
- 3 cloves garlic, minced

- 1 teaspoon dried oregano
- Salt and pepper to taste
- Fresh basil for garnish
Instructions
- Heat the olive oil in a large pot over medium heat.
- Toss in the diced onion and sauté until it becomes translucent, about 3-4 minutes.
- Add the minced garlic and dried oregano, cooking for an additional minute until fragrant.
- Mix in the sun-dried tomatoes and let them cook for a couple of minutes.
- Pour in the vegetable broth and bring the mixture to a gentle simmer.
- Stir in the butter beans and chopped kale, cooking until the kale wilts and the soup is heated throughout—about 5-7 minutes.
- Season with salt and pepper to your taste.
- Serve the soup hot, garnished with fresh basil.
