Description

A hearty dish combining baked sweet potatoes with savory seasoned ground turkey, black beans, and fresh toppings.


Ingredients

  • 2 medium sweet potatoes
  • 1 pound ground turkey
  • 1 taco seasoning packet
  • 1 can black beans, rinsed and drained
  • 1 cup corn (fresh, frozen, or canned)
  • 1 cup diced tomatoes
  • Salt and pepper to taste
  • Toppings: avocado, salsa, cheese, cilantro

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Pierce each sweet potato several times with a fork. Place them on a baking sheet and bake for 40-45 minutes, or until fork-tender.
  3. While the sweet potatoes are baking, heat a skillet over medium heat. Add the ground turkey and cook until browned, breaking it apart as it cooks.
  4. Once the turkey is browned, stir in the taco seasoning, black beans, corn, and diced tomatoes. Mix until everything is heated through.
  5. When the sweet potatoes are done, carefully slice them open and fluff the insides with a fork.
  6. Generously fill each potato with the turkey mixture and top with avocado, salsa, cheese, and cilantro as you like. Serve warm and enjoy!

Notes

Store leftovers wrapped in plastic wrap or in an airtight container for up to 3 days. Can be frozen for up to 3 months.
