- 1 cup almond milk (unsweetened)
- 1/4 cup chia seeds
- 2 tablespoons maple syrup (or honey)
- 1 teaspoon vanilla extract
- 1 tablespoon instant coffee granules (or espresso powder)
- 2 tablespoons cocoa powder (unsweetened)
- 1/2 cup Greek yogurt (or dairy-free yogurt)
- Dark chocolate shavings (for garnish)
- Cocoa powder (for dusting)
- Optional: crushed coffee beans for crunch
Instructions
- Mix the almond milk, chia seeds, maple syrup, and vanilla extract in a mixing bowl until well combined.
- Dissolve the instant coffee granules in 2 tablespoons of warm water in a separate bowl, then add this mixture to the chia mix and stir until evenly distributed.
- Mix the cocoa powder with a couple of tablespoons of almond milk until it forms a smooth paste, then stir this into half of the chia mixture.
- Start layering the chia pudding into serving glasses with the plain chia mixture first, followed by the cocoa-infused mix.
- Alternate layers until the glasses are filled, creating a visual design of both the coffee and cocoa elements.
- Add a dollop of Greek yogurt on top, sprinkle with cocoa powder and dark chocolate shavings for garnish.
- Chill in the refrigerator for at least 120-240 minutes, preferably overnight.
- Serve chilled, with optional crushed coffee beans for an added crunch.
