Description

A creamy, plant-based take on the classic Italian tiramisu, featuring almond milk, chia seeds, cocoa, and coffee.


Ingredients

  • 1 cup almond milk (unsweetened)
  • 1/4 cup chia seeds
  • 2 tablespoons maple syrup (or honey)
  • 1 teaspoon vanilla extract
  • 1 tablespoon instant coffee granules (or espresso powder)
  • 2 tablespoons cocoa powder (unsweetened)
  • 1/2 cup Greek yogurt (or dairy-free yogurt)
  • Dark chocolate shavings (for garnish)
  • Cocoa powder (for dusting)
  • Optional: crushed coffee beans for crunch

Instructions

  1. Mix the almond milk, chia seeds, maple syrup, and vanilla extract in a mixing bowl until well combined.
  2. Dissolve the instant coffee granules in 2 tablespoons of warm water in a separate bowl, then add this mixture to the chia mix and stir until evenly distributed.
  3. Mix the cocoa powder with a couple of tablespoons of almond milk until it forms a smooth paste, then stir this into half of the chia mixture.
  4. Start layering the chia pudding into serving glasses with the plain chia mixture first, followed by the cocoa-infused mix.
  5. Alternate layers until the glasses are filled, creating a visual design of both the coffee and cocoa elements.
  6. Add a dollop of Greek yogurt on top, sprinkle with cocoa powder and dark chocolate shavings for garnish.
  7. Chill in the refrigerator for at least 120-240 minutes, preferably overnight.
  8. Serve chilled, with optional crushed coffee beans for an added crunch.
