- 1 cup rolled oats
- 1 cup coconut milk
- 1 teaspoon vanilla extract
- 2 tablespoons maple syrup
- Shredded coconut (for topping)
- Fresh fruit (for topping, optional)
Instructions
- In a bowl or a jar, mix 1 cup of rolled oats with 1 cup of coconut milk.
- Add in 1 teaspoon of vanilla extract and 2 tablespoons of maple syrup. Stir well to combine all the ingredients.
- Cover the bowl or jar and place it in the refrigerator overnight.
- The next morning, take it out and give it a good stir. If it’s too thick for your liking, add a splash of coconut milk.
- Top with shredded coconut and any fresh fruit of your choice. Enjoy your delicious, no-bake coconut cream oats!

These oats can be stored in an airtight container in the fridge for up to 5 days. Add fresh toppings just before serving.
