- 1 cup cooked chicken, shredded
- 1/4 cup mayonnaise
- 1/4 cup Greek yogurt

Instructions
- Slice the cucumber lengthwise and carefully scoop out the seeds to create a hollow tube.
- Mix the filling: In a mixing bowl, combine the shredded chicken, mayonnaise, Greek yogurt, diced celery, diced red onion, Dijon mustard, salt, and pepper. Stir until everything is well blended.
- Stuff the cucumbers: Spoon the chicken salad mixture generously into each cucumber half.
- Roll it up: Carefully roll the stuffed cucumber slices. If the roll ups need a little help staying together, secure them with a toothpick.
- Garnish: Sprinkle with fresh parsley for a pop of color and serve chilled.
