Description

Ingredients

  • 1 cup cooked chicken, shredded
  • 1/4 cup mayonnaise
  • 1/4 cup Greek yogurt
  • 1/4 cup diced celery
  • 1/4 cup diced red onion
  • 1 tablespoon Dijon mustard
  • Salt and pepper, to taste
  • Fresh parsley for garnish

Instructions

  1. Slice the cucumber lengthwise and carefully scoop out the seeds to create a hollow tube.
  2. Mix the filling: In a mixing bowl, combine the shredded chicken, mayonnaise, Greek yogurt, diced celery, diced red onion, Dijon mustard, salt, and pepper. Stir until everything is well blended.
  3. Stuff the cucumbers: Spoon the chicken salad mixture generously into each cucumber half.
  4. Roll it up: Carefully roll the stuffed cucumber slices. If the roll ups need a little help staying together, secure them with a toothpick.
