- 8 oz Boursin cheese (any flavor)
- 1 cup spinach, chopped
- 1 cup cherry tomatoes, halved
- 1 tablespoon olive oil
- Salt, to taste

Instructions
- Preheat your oven to 375°F (190°C).
- Heat olive oil in a skillet over medium heat. Season chicken with salt and pepper.
- Cook the chicken until golden brown, about 3-4 minutes per side.
- Combine Boursin cheese, chopped spinach, and halved cherry tomatoes in a bowl.
- Transfer the browned chicken to a baking dish and top each breast with the Boursin mixture.
- Bake for 20-25 minutes or until the chicken reaches an internal temperature of 165°F (75°C).
- Serve warm and enjoy!
