Description

Fluffy pancakes filled with mini marshmallows and chocolate chips, reminiscent of classic s’mores.


Ingredients

  • 1 cup all-purpose flour
  • 2 tablespoons sugar
  • 1 tablespoon baking powder
  • 1/4 teaspoon salt
  • 1 cup milk
  • 1 large egg
  • 2 tablespoons melted butter
  • 1 teaspoon vanilla extract
  • 1/2 cup mini marshmallows
  • 1/2 cup chocolate chips
  • Graham cracker crumbs for topping
  • Syrup for serving

Instructions

  1. Combine the all-purpose flour, sugar, baking powder, and salt in a mixing bowl.
  2. Whisk together the milk, egg, melted butter, and vanilla extract in a separate bowl.
  3. Fold the wet ingredients into the dry mixture, being careful not to overmix.
  4. Gently fold in the mini marshmallows and chocolate chips.
  5. Preheat your skillet or griddle over medium heat and lightly grease with cooking spray.
  6. Pour about 1/4 cup of batter onto the skillet for each pancake, cooking until bubbles form (around 2-3 minutes).
  7. Flip the pancakes and cook for another 1-2 minutes until golden brown.
  8. Serve warm, topped with graham cracker crumbs and syrup.

Notes

Add fresh fruit or whipped cream for extra flavor. Can substitute ingredients for dietary needs.
