Description

A quick and flavorful dish combining shrimp and asparagus with sweet chili sauce.


Ingredients

  • 1 lb shrimp, peeled and deveined
  • 1 bunch asparagus, trimmed and cut into 2-inch pieces
  • 1 tablespoon olive oil (or sesame oil for extra flavor)
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, grated
  • ½ teaspoon red pepper flakes (optional)
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
  • ⅓ cup sweet chili sauce
  • 2 tablespoons soy sauce (or tamari for gluten-free)
  • 1 tablespoon honey
  • 1 tablespoon rice vinegar
  • 1 teaspoon cornstarch mixed with 2 teaspoons water
  • 1 tablespoon sesame seeds (for garnish)
  • 2 tablespoons green onions, sliced (for garnish)
  • Lime wedges (for serving)

Instructions

  1. Prepare the ingredients by patting the shrimp dry and seasoning with salt and black pepper. Trim the asparagus and slice into 2-inch pieces. Mince the garlic and grate the ginger.
  2. Make the sweet chili sauce by whisking together the sweet chili sauce, soy sauce, honey, rice vinegar, and cornstarch slurry in a small bowl.
  3. Cook the asparagus in a large pan or wok with olive oil over medium-high heat for 2–3 minutes until tender but crisp. Remove and set aside.
  4. Cook the shrimp in the same pan with garlic, ginger, and red pepper flakes for about 2 minutes each side until pink and opaque.
  5. Add the sweet chili sauce mixture, stir for 1–2 minutes until the sauce thickens.
  6. Combine everything by returning the asparagus to the pan, tossing until well-coated, and let sit for 1–2 minutes.
  7. Garnish with sesame seeds and green onions before serving hot with rice or noodles.

Notes

Customize the heat level by adding or omitting red pepper flakes. Store leftovers in an airtight container for 2-3 days.
