- 1 cup unsalted butter, softened
- 1 cup brown sugar
- ½ cup granulated sugar
- 2 large eggs
- 2 teaspoons vanilla extract
- 2¾ cups all-purpose flour
- 1 teaspoon baking soda
- ½ teaspoon baking powder
- ½ teaspoon salt
- 1 cup white chocolate chips (optional)
- ½ cup Biscoff cookie butter (slightly chilled)
Instructions
- Prepare the Filling: Scoop teaspoons of the chilled Biscoff cookie butter onto a parchment-lined tray and freeze for at least 30 minutes until firm.
- Make the Dough: In a mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until fluffy. Beat in the eggs and vanilla extract until well combined.
- Combine Dry Ingredients: In another bowl, whisk together the flour, baking soda, baking powder, and salt. Gradually add these dry ingredients to the wet mixture, stirring until just combined. If adding white chocolate chips, fold them in now.
- Assemble the Cookies: Scoop a heaping tablespoon of dough, flatten it slightly, and place a frozen cookie butter ball in the center. Carefully wrap the dough around the filling, sealing it completely.
- Bake: Preheat the oven to 350°F (175°C). Arrange the stuffed cookies on a parchment-lined baking sheet, leaving space between each one. Bake for 10-12 minutes or until the edges are golden but the centers remain soft.
- Serve: Allow the cookies to cool for about 5 minutes before serving. Enjoy them warm for the best gooey experience!
