Description

A delightful blend of snickerdoodle cookie base and creamy cheesecake with a refreshing strawberry swirl.


Ingredients

  • 1 cup Unsalted butter
  • 1 cup Granulated sugar
  • 1/2 cup Brown sugar
  • 2 Eggs
  • 2 1/2 cups All-purpose flour
  • 1 tsp Baking powder
  • 1 tsp Ground cinnamon
  • 1/2 tsp Salt
  • 16 oz Cream cheese (softened)
  • 1 cup Powdered sugar
  • 1 tsp Vanilla extract
  • 2 Eggs
  • 1 cup Fresh strawberries (pureed)
  • 1 tbsp Sugar (optional)

Instructions

  1. Prepare the oven and pan: Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking pan or line it with parchment paper for easy removal.
  2. Make the snickerdoodle base: In a mixing bowl, cream together the butter, granulated sugar, and brown sugar until smooth. Add the eggs, one at a time, mixing well after each. In another bowl, whisk together flour, baking powder, cinnamon, and salt. Gradually add the dry ingredients to the wet mixture, combining until just mixed.
  3. Assemble the bars: Spread half of the snickerdoodle dough evenly in the prepared pan.
  4. Prepare the cheesecake layer: In a separate bowl, beat the softened cream cheese until smooth. Gradually add the powdered sugar and vanilla extract, mixing until creamy and free of lumps. Add the eggs and mix until just combined.
  5. Layer the cheesecake mixture: Spread the cheesecake mixture over the snickerdoodle base.
  6. Add strawberry swirl: Drop spoonfuls of strawberry puree over the cheesecake layer. Using a knife, gently swirl the puree into the cheesecake to create a marbled effect.
  7. Finish with the remaining dough: crumble the remaining snickerdoodle dough on top.
  8. Bake: Place the pan in the preheated oven and bake for 25-30 minutes, or until the edges are golden and a toothpick inserted in the center comes out clean. Allow to cool before slicing.

Notes

Serve with vanilla ice cream or whipped cream for an extra treat.
