Delightful cookies combining the nostalgia of Pop Tarts with the beloved taste of sugar cookies, filled with sweet strawberry jam.
Ingredients

- 2 1/2 cups all-purpose flour
- 1 cup unsalted butter (softened)
- 1 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 3/4 cup strawberry jam
- 1 cup powdered sugar (for glaze)
- 2 tablespoons milk
- Pink or red sprinkles for decoration
Instructions
- Cream butter and sugar together until light and fluffy.
- Add egg and vanilla, mixing until well blended.
- Mix dry ingredients in a separate bowl.
- Combine wet and dry ingredients, stirring until just combined.
- Chill the dough in plastic wrap for about 30 minutes.
- Preheat your oven to 350°F (175°C).
- Roll the dough out to about 1/4 inch thick.
- Cut cookie shapes and place on a lined baking sheet.
- Add a spoonful of strawberry jam on half of the cookie shapes.
- Cover with remaining cookie shapes and press edges to seal.
- Bake for 12-15 minutes until golden at edges.
- Add glaze made from powdered sugar and milk, then sprinkle with colorful sprinkles.
Notes
Experiment with different fruit jams for varied flavors. Ensure not to overmix the dough.
