- 1 sheet store-bought puff pastry
- 1 cup fresh strawberries, sliced
- 60 ml lemon juice
- 50 g granulated sugar (for the compote)
- 225 g cream cheese, softened
- 67 g granulated sugar (for the filling)
- 120 ml heavy cream
- 10 ml vanilla extract
- 1.25–2.5 ml almond extract
- Powdered sugar (for dusting)
- Fresh strawberries, sliced (for garnish)
Instructions
- Preheat your oven to 200°C. Line a baking tray with parchment paper or a silicone mat.
- Prepare the puff pastry: Cut it into six rectangles, bake for 10–15 minutes until golden brown.
- Make the strawberry compote: Combine sliced strawberries with sugar and lemon juice, cook over medium heat, mashing occasionally, for 15–20 minutes until thickened.
- Prepare the cream cheese filling: Blend softened cream cheese with sugar until smooth. Add heavy cream and beat until aerated. Mix in vanilla and almond extracts.
- Assemble the pastries: Halve baked pastry, spread cream cheese filling, add strawberries, spoon on compote, and place top half back on.
- Dust with powdered sugar and garnish with additional strawberry slices just before serving.
Notes
Serve with a scoop of vanilla ice cream or a dollop of whipped cream. Store leftovers in an airtight container for up to two days.
