Description

A delightful twist on classic cinnamon rolls, featuring fluffy dough and a sweet strawberry filling topped with a creamy glaze, perfect for breakfast or brunch.


Ingredients

  • 260 ml (1 cup) warm milk
  • 10 g (1 tbsp) instant dry yeast
  • 540 g (4 ¼ cups) all-purpose flour
  • 65 g (⅓ cup) granulated sugar
  • 1 tsp salt
  • 1 large egg (room temperature)
  • 80 g (⅓ cup) very soft unsalted butter
  • 250 g (1 ¾ cups) fresh or frozen strawberries
  • 50 g (¼ cup) granulated sugar (for filling)
  • Juice of half a lemon
  • 100 g (½ cup) softened cream cheese
  • 40 g (3 tbsp) softened unsalted butter (for glaze)
  • 60 g (½ cup) powdered sugar
  • 1 tsp vanilla extract
  • 2 tbsp cold strawberry puree (from the filling)

Instructions

  1. Prepare the Strawberry Filling: In a saucepan, combine the strawberries, lemon juice, and granulated sugar. Cook over medium heat for about 10 minutes, stirring occasionally, until it thickens to a jam-like consistency. Blend until smooth and chill.
  2. Make the Dough: In a stand mixer, mix the flour, sugar, salt, and yeast briefly. Add in the warm milk, butter, and egg. Knead for 5 to 7 minutes until the dough is smooth and elastic. Let it rise in a draft-free spot for around 120 minutes, or until it doubles in size.
  3. Roll the Dough: Lightly flour a clean surface and roll out the dough into a large rectangle (40 x 30 cm). Spread the cooled strawberry filling evenly, leaving a small border. Roll the dough tightly into a log and cut it into 12 even pieces.
  4. Second Rise: Place the rolls in a greased baking dish (9×13 inches), cover, and let rise again for 30 to 60 minutes. Preheat the oven to 180°C (350°F) during this time.
  5. Bake: Bake the rolls for 20 to 25 minutes, until golden brown. Allow them to cool slightly in the dish.
  6. Prepare the Glaze: Beat together cream cheese, softened butter, powdered sugar, vanilla, and cold strawberry puree for 1 to 2 minutes until smooth.
  7. Glaze and Serve: Generously spread the creamy glaze over the slightly warm rolls, letting it melt into every crevice. Serve immediately for the best experience.
