Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Mix the flour, baking soda, and salt in a bowl.
- Cream the softened butter with granulated sugar and brown sugar, then add the egg and vanilla extract, mixing until smooth.
- Combine the dry ingredients with the butter mixture until just combined. Fold in the white chocolate chips and diced strawberries.
- Prepare the filling by mixing the cream cheese, powdered sugar, and vanilla extract until smooth.
- Shape the cookies by scooping a portion of dough, flattening it, placing a small amount of filling in the center, encasing it with dough, and rolling into a ball.
- Bake in the oven for 10-12 minutes, or until golden. Allow to cool before transferring to a wire rack.
Notes
For a twist, substitute white chocolate with milk or dark chocolate and fresh strawberries with raspberries or blueberries.
