Description

Ingredients

  • 4 ounces cream cheese, softened
  • 1/4 cup powdered sugar
  • 1/2 teaspoon vanilla extract (for filling)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Mix the flour, baking soda, and salt in a bowl.
  3. Cream the softened butter with granulated sugar and brown sugar, then add the egg and vanilla extract, mixing until smooth.
  4. Combine the dry ingredients with the butter mixture until just combined. Fold in the white chocolate chips and diced strawberries.
  5. Prepare the filling by mixing the cream cheese, powdered sugar, and vanilla extract until smooth.
  6. Shape the cookies by scooping a portion of dough, flattening it, placing a small amount of filling in the center, encasing it with dough, and rolling into a ball.
  7. Bake in the oven for 10-12 minutes, or until golden. Allow to cool before transferring to a wire rack.

Notes

For a twist, substitute white chocolate with milk or dark chocolate and fresh strawberries with raspberries or blueberries.
