Description

Delightful pancakes infused with creamy cheesecake and fresh strawberries, perfect for a special breakfast or brunch.


Ingredients

  • 2 tablespoons sugar

  • 1¼ cups milk
  • 1 egg
  • 2 tablespoons melted butter
  • 1 teaspoon vanilla extract
  • 4 oz cream cheese (softened)
  • 2 tablespoons powdered sugar
  • 1 teaspoon vanilla extract
  • 2 tablespoons milk
  • 1½ cups fresh strawberries (hulled and chopped)
  • 2 tablespoons sugar
  • 1 teaspoon lemon juice

Instructions

  1. Prepare the Strawberry Sauce: In a saucepan, combine the chopped strawberries, sugar, and lemon juice. Cook over medium heat until the strawberries soften, then mash some of the berries and set aside to cool.
  2. Mix the Dry Ingredients: In a bowl, whisk together the flour, sugar, baking powder, and salt.
  3. Combine the Wet Ingredients: In a separate bowl, whisk together the milk, egg, melted butter, and vanilla extract until smooth.
  4. Mix Together: Pour the wet mixture into the dry ingredients and stir until just combined. Allow the batter to rest for about 5-10 minutes for fluffier pancakes.
  5. Prepare the Cheesecake Filling: In a blender or mixing bowl, beat the softened cream cheese, powdered sugar, vanilla, and milk until smooth and creamy.
  6. Cook the Pancakes: Heat a greased skillet or griddle over medium heat. Pour about ¼ cup of batter for each pancake and cook until golden brown on both sides, about 2-3 minutes per side.
  7. Layer and Serve: Once cooked, layer the pancakes with the cheesecake filling in between and top with the homemade strawberry sauce.

Notes

Serve with whipped cream or powdered sugar for added sweetness. Great as leftovers when reheated!
