- 1 cup mashed ripe bananas (about 2–3 bananas)
- 1 cup chopped strawberries (fresh or frozen)
- 1/2 cup sugar
- 1/2 cup milk
- 1/4 cup vegetable oil
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup powdered sugar (for glaze)
- 2 tablespoons milk (for glaze)
Instructions
- Preheat your oven to 350°F (175°C) and lightly grease a loaf pan.
- Combine the pancake mix and sugar in a large mixing bowl.
- Whisk together the mashed bananas, chopped strawberries, milk, vegetable oil, eggs, and vanilla extract in another bowl until fully blended.
- Pour the wet mixture into the dry ingredients, gently mixing until just combined.
- Pour the batter into the prepared loaf pan and smooth out the top.
- Bake in the preheated oven for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the bread to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
- Mix the powdered sugar and milk in a small bowl for the glaze until smooth and drizzle it over the cooled bread.
