Description

Ingredients

  • 1 cup mashed ripe bananas (about 23 bananas)
  • 1 cup chopped strawberries (fresh or frozen)
  • 1/2 cup sugar
  • 1/2 cup milk
  • 1/4 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup powdered sugar (for glaze)
  • 2 tablespoons milk (for glaze)

Instructions

  1. Preheat your oven to 350°F (175°C) and lightly grease a loaf pan.
  2. Combine the pancake mix and sugar in a large mixing bowl.
  3. Whisk together the mashed bananas, chopped strawberries, milk, vegetable oil, eggs, and vanilla extract in another bowl until fully blended.
  4. Pour the wet mixture into the dry ingredients, gently mixing until just combined.
  5. Pour the batter into the prepared loaf pan and smooth out the top.
  6. Bake in the preheated oven for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
