- 2 medium zucchinis, sliced
- 1 can (15 oz) chickpeas, drained and rinsed
- 1 cup shredded cheese (optional)
- 1 cup breadcrumbs (or gluten-free alternative)
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- Salt and pepper to taste
- 1 teaspoon dried oregano
- 1 teaspoon paprika
Instructions
- Preheat your oven to 375°F (190°C).
- Combine the fresh spinach, sliced zucchini, chickpeas, minced garlic, olive oil, salt, pepper, oregano, and paprika in a large mixing bowl. Mix everything well until all ingredients are coated.
- Transfer the hearty mixture into a suitable baking dish, and if you’re using cheese, sprinkle it on top along with the breadcrumbs.
