- 1 sheet puff pastry
- 1 cup fresh spinach, chopped
- 8 oz cream cheese, softened
- 1/2 cup grated Parmesan cheese
- 1/4 cup onion, finely chopped
- 1 clove garlic, minced
- 1 egg (for egg wash)
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C).
- Heat a splash of oil in a skillet over medium heat. Add the finely chopped onion and garlic. Sauté until soft and fragrant.
- Toss in the chopped spinach and cook until wilted, just a few minutes.
- Combine the cooked spinach with cream cheese, grated Parmesan, salt, and pepper in a mixing bowl. Stir until well mixed.
- Roll out the puff pastry on a lightly floured surface and cut it into squares, around 3×3 inches.
- Place a generous spoonful of the spinach mixture in the center of each square.
- Fold the corners of the pastry over the filling and pinch to seal tightly.
- Brush the tops with a beaten egg for a beautiful golden finish.
- Bake in the preheated oven for 15-20 minutes, or until they are golden brown and puffed.
- Serve warm, and enjoy the deliciousness!
Notes
For a lighter option, ricotta cheese or Greek yogurt can be used as a substitute for cream cheese.
