A delicious twist on classic quesadillas, filled with nutritious spinach and tangy feta cheese.
Ingredients

- 2 cups fresh spinach
- 1 cup feta cheese, crumbled
- 4 large tortillas
- 1 tablespoon olive oil
- Salt and pepper to taste
Instructions
- Heat the olive oil in a skillet over medium heat.
- Add the fresh spinach and sauté until wilted, about 2 minutes.
- Remove the skillet from heat and mix in the crumbled feta cheese.
- Place a tortilla in the skillet and spoon a portion of the spinach and feta mixture onto one half of the tortilla.
- Fold the other half over to create a half-moon shape.
- Cook the quesadilla for 2-3 minutes on each side until crispy and golden brown.
- Repeat with the remaining tortillas and filling.
- Cut into wedges and serve warm.
