Description

A delicious twist on classic quesadillas, filled with nutritious spinach and tangy feta cheese.


Ingredients

Scale
  • 2 cups fresh spinach
  • 1 cup feta cheese, crumbled
  • 4 large tortillas
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. Heat the olive oil in a skillet over medium heat.
  2. Add the fresh spinach and sauté until wilted, about 2 minutes.
  3. Remove the skillet from heat and mix in the crumbled feta cheese.
  4. Place a tortilla in the skillet and spoon a portion of the spinach and feta mixture onto one half of the tortilla.
  5. Fold the other half over to create a half-moon shape.
  6. Cook the quesadilla for 2-3 minutes on each side until crispy and golden brown.
  7. Repeat with the remaining tortillas and filling.
  8. Cut into wedges and serve warm.
