- 500g chicken breast, cut into bite-sized pieces
- 2 tbsp soy sauce
- 1 tbsp chili sauce (adjust according to your heat preference)
- 2 tbsp cornstarch
- 1 bell pepper, sliced
- 1 onion, sliced
- 3–4 green chilies, chopped
- 2–3 cloves garlic, minced
- 1 tsp ginger, minced
- 1 tbsp vegetable oil
- Salt to taste
- Spring onions for garnish
Instructions
- Marinate the chicken: In a bowl, combine chicken pieces with soy sauce, chili sauce, salt, and cornstarch. Let it marinate for at least 30 minutes.
- Heat the vegetable oil in a pan over medium heat. Add the minced garlic and ginger, sautéing until fragrant—about 1-2 minutes.
- Add the marinated chicken to the pan. Cook it until browned and fully cooked through, about 7-10 minutes.
- Toss in the sliced bell pepper, onion, and chopped green chilies. Stir-fry for another 5-7 minutes until the vegetables are tender yet crisp.

Adjust spice levels to taste; can also swap chicken for tofu or chickpeas for a vegetarian version.
