Description

Ingredients

  • 4 cups tart apples, peeled and chopped
  • 2 tablespoons olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 3 cups vegetable broth
  • ¼½ teaspoon chili flakes
  • ½ teaspoon smoked paprika
  • 1 teaspoon salt, or to taste
  • ½ teaspoon black pepper
  • 1 tablespoon apple cider vinegar or lemon juice

Instructions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the chopped onion and sauté until it’s soft and translucent.
  3. Stir in the minced garlic, cooking briefly until fragrant.
  4. Add the chopped apples, chili flakes, smoked paprika, salt, and pepper to the pot, stirring well.
  5. Pour in the vegetable broth and bring the mixture to a gentle boil.
  6. Once boiling, reduce the heat and let it simmer until the apples are very tender.
  7. Using an immersion blender (or a traditional blender), blend the soup until smooth.
  8. Stir in the apple cider vinegar or lemon juice, adjusting seasoning to taste.
  9. Serve the soup warm, enjoying its rich flavors.
