- 1 tablespoon apple cider vinegar or lemon juice
Instructions
- Heat the olive oil in a large pot over medium heat.
- Add the chopped onion and sauté until it’s soft and translucent.
- Stir in the minced garlic, cooking briefly until fragrant.
- Add the chopped apples, chili flakes, smoked paprika, salt, and pepper to the pot, stirring well.
- Pour in the vegetable broth and bring the mixture to a gentle boil.
- Once boiling, reduce the heat and let it simmer until the apples are very tender.
- Using an immersion blender (or a traditional blender), blend the soup until smooth.
- Stir in the apple cider vinegar or lemon juice, adjusting seasoning to taste.
- Serve the soup warm, enjoying its rich flavors.
