Description

Instructions

  1. Preheat your oven: Set it to 350°F (175°C) and prepare a baking sheet by lining it with parchment paper.
  2. Mix the dry ingredients: In a medium bowl, combine the all-purpose flour, baking soda, baking powder, salt, and instant vanilla pudding mix; whisk together and set aside.
  3. Cream the butter and sugars: In a large mixing bowl, use an electric mixer to cream together the softened unsalted butter, granulated sugar, and brown sugar until the mixture is light and fluffy, about 2-3 minutes.
  4. Add the eggs and bananas: Beat in the egg and mashed bananas until thoroughly combined. Then mix in the vanilla extract.
  5. Combine mixtures: Gradually add the dry ingredient mixture to the wet ingredients, mixing until just combined. If you choose to, fold in the chocolate chips for added richness.
  6. Scoop and bake: Using a cookie scoop or tablespoon, drop rounded balls of dough onto the prepared baking sheet, spacing them about 2 inches apart. Bake in the preheated oven for 10-12 minutes or until the edges are golden brown and the centers are set but still soft.
  7. Cool and serve: Remove from the oven and let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely. Once cooled, dust lightly with powdered sugar and top each cookie with a dollop of whipped cream and a slice of banana.
