Description

This indulgent S’mores Brownie Pie combines fudgy brownies and toasted marshmallows for a perfect dessert.


Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 6 tablespoons unsalted butter, melted
  • 1/2 cup unsalted butter
  • 2 tablespoons vegetable oil or melted coconut oil
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 egg yolk, at room temperature
  • 2 teaspoons pure vanilla extract
  • 3/4 cup unsweetened cocoa powder
  • 1/2 cup all-purpose flour
  • 1/4 teaspoon salt
  • 1 cup semi-sweet chocolate chips
  • 2425 large marshmallows

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9-inch pie dish.
  2. Combine the graham cracker crumbs, 1/4 cup sugar, and melted butter in a mixing bowl. Press the mixture firmly into the bottom of the pie dish to form your crust.
  3. Melt 1/2 cup unsalted butter in a saucepan over low heat. Mix in the vegetable oil and 1 cup of sugar; add in the eggs, egg yolk, and vanilla extract, whisking until smooth.
  4. Sift in the cocoa powder, flour, and salt, stirring until just combined. Carefully fold in the chocolate chips.
  5. Pour the brownie batter into the graham cracker crust and spread it evenly. Bake for 30 minutes.
  6. Remove from the oven and top with marshmallows; return to oven or broil for an additional 3 minutes until golden brown.
  7. Allow the pie to cool for 45 minutes to 2 hours before slicing.

Notes

For best results, use a hot knife to cut through the marshmallows for clean slices.
