This indulgent S’mores Brownie Pie combines fudgy brownies and toasted marshmallows for a perfect dessert.

- 1 1/2 cups graham cracker crumbs
- 1/4 cup granulated sugar
- 6 tablespoons unsalted butter, melted
- 1/2 cup unsalted butter
- 2 tablespoons vegetable oil or melted coconut oil
- 1 cup granulated sugar
- 2 large eggs
- 1 egg yolk, at room temperature
- 2 teaspoons pure vanilla extract
- 3/4 cup unsweetened cocoa powder
- 1/2 cup all-purpose flour
- 1/4 teaspoon salt
- 1 cup semi-sweet chocolate chips
- 24–25 large marshmallows
Instructions
- Preheat the oven to 350°F (175°C) and grease a 9-inch pie dish.
- Combine the graham cracker crumbs, 1/4 cup sugar, and melted butter in a mixing bowl. Press the mixture firmly into the bottom of the pie dish to form your crust.
- Melt 1/2 cup unsalted butter in a saucepan over low heat. Mix in the vegetable oil and 1 cup of sugar; add in the eggs, egg yolk, and vanilla extract, whisking until smooth.
- Sift in the cocoa powder, flour, and salt, stirring until just combined. Carefully fold in the chocolate chips.
- Pour the brownie batter into the graham cracker crust and spread it evenly. Bake for 30 minutes.
- Remove from the oven and top with marshmallows; return to oven or broil for an additional 3 minutes until golden brown.
- Allow the pie to cool for 45 minutes to 2 hours before slicing.
Notes
For best results, use a hot knife to cut through the marshmallows for clean slices.
