Ingredients

  • 2 ripe peaches, diced
  • 1 French baguette, sliced
  • 1 cup ricotta cheese
  • 1 tablespoon honey (plus more for drizzling)
  • Fresh basil leaves, chopped
  • Salt and pepper to taste
  • Olive oil for drizzling

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Slice the baguette into ½-inch pieces and place them on a baking sheet. Drizzle with olive oil and toast in the oven for about 5-7 minutes until golden brown.
  3. In a mixing bowl, combine the ricotta cheese and honey. Season with salt and pepper to taste.
  4. Once the bread is perfectly toasted, spread a generous layer of the whipped ricotta onto each slice.
  5. Top with diced peaches and finish with a sprinkle of fresh basil.
  6. Drizzle a little more honey over the top if you desire and serve immediately.
