Description

Delightful crispy Greek lemon potatoes with a zesty garlic marinade, perfect for any meal.


Ingredients

  • 2 pounds baby potatoes
  • 1/4 cup olive oil
  • 2 lemons, zested and juiced
  • 4 cloves garlic, minced
  • 1 teaspoon dried oregano
  • Salt and pepper, to taste
  • Fresh parsley, for garnish

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Combine the olive oil, lemon zest, lemon juice, minced garlic, oregano, salt, and pepper in a large mixing bowl.
  3. Cut the baby potatoes in half and toss them in the bowl until well-coated.
  4. Arrange the potatoes in a single layer on a baking sheet.
  5. Roast in the preheated oven for 45-50 minutes, flipping halfway through.
  6. Garnish with fresh parsley before serving.
