- 2 lemons, zested and juiced

- Fresh parsley, for garnish
Instructions
- Preheat your oven to 425°F (220°C).
- Combine the olive oil, lemon zest, lemon juice, minced garlic, oregano, salt, and pepper in a large mixing bowl.
- Cut the baby potatoes in half and toss them in the bowl until well-coated.
- Arrange the potatoes in a single layer on a baking sheet.
- Roast in the preheated oven for 45-50 minutes, flipping halfway through.
- Garnish with fresh parsley before serving.
