- 1 medium onion, thinly sliced
- 2 tomatoes, chopped
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- Salt and pepper to taste

Instructions
- Prepare the chicken: Season both sides of the chicken breasts with salt and pepper.
- Sauté the onions: In a large skillet over medium heat, heat the olive oil. Add the sliced onions and cook for about 5 minutes, stirring occasionally until they begin to soften.
- Cook the chicken: Push the onions to one side of the skillet and add the seasoned chicken breasts. Cook for 6-7 minutes on each side, or until the chicken is golden and cooked through.
- Add tomatoes and garlic: Add the chopped tomatoes and minced garlic to the skillet. Stir everything together, allowing the flavors to meld for another 3-4 minutes.
- Finish and serve: Once the chicken is fully cooked and the tomatoes are tender, remove from heat. Let it rest for a few minutes before slicing and serving.
Notes
