- 8 oz pasta (linguine or spaghetti)
- 1 lb shrimp, peeled and deveined
- 3 cloves garlic, minced
- 1 cup heavy cream
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 2 tbsp olive oil
- 1 tbsp lemon juice
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Preheat your oven to 375°F (190°C).
- Cook the pasta according to package instructions until al dente. Drain and set aside.
- Heat olive oil in a large skillet over medium heat. Add the minced garlic and sauté until fragrant, about 1 minute.
- Add shrimp to the skillet and cook until pink and opaque, seasoning with salt, pepper, and lemon juice.
- Combine the cooked pasta with the shrimp mixture, heavy cream, mozzarella, and half of the Parmesan in a mixing bowl. Mix well to combine.
- Transfer the pasta mixture to a baking dish and top with the remaining Parmesan cheese.
- Bake in the preheated oven for 20-25 minutes, or until bubbly and golden.
- Garnish with fresh parsley before serving.
Notes
This dish can be prepared ahead of time and simply popped into the oven when ready to serve. Consider using whole wheat pasta for added nutrition or substituting shrimp with chicken or veggies for a different twist.
