Description

Ingredients

  • 1 pound shrimp, peeled and deveined
  • 1 ripe avocado, diced
  • 1 ripe mango, diced
  • 2 cups cooked rice (white or brown)
  • 1 cup mixed crunchy veggies (bell peppers, cucumber, or carrots)
  • 2 tablespoons olive oil
  • Juice of 1 lime
  • Salt and pepper to taste
  • Fresh cilantro (optional, for garnish)

Instructions

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the shrimp to the skillet and cook for 2-3 minutes on each side until they are pink and opaque. Season with salt and pepper while cooking.
  3. In a large bowl, mix together the cooked rice, diced avocado, diced mango, and mixed veggies.
  4. Squeeze the fresh lime juice over the mixture and toss it gently to combine everything.
  5. Top the bowl with the cooked shrimp and, if desired, sprinkle with fresh cilantro for an extra pop of flavor.
