Ingredients

  • 4 boneless, skinless chicken breasts
  • 4 medium potatoes, diced
  • 2 cups mixed vegetables (such as bell peppers, carrots, or broccoli)
  • 1/2 cup butter
  • 4 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon Italian seasoning
  • 1 tablespoon olive oil

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Melt the butter in a small saucepan over low heat. Stir in the minced garlic, salt, black pepper, and Italian seasoning.
  3. Arrange the chicken breasts and diced potatoes on a large sheet pan. Drizzle with olive oil and season with salt and pepper.
  4. Pour the garlic butter mixture over the chicken and potatoes, coating well.
  5. Roast in the preheated oven for 25-30 minutes until the chicken is cooked and potatoes are tender.
