- 4 medium potatoes, diced
- 2 cups mixed vegetables (such as bell peppers, carrots, or broccoli)
- 1/2 cup butter
- 4 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon Italian seasoning
- 1 tablespoon olive oil
Instructions
- Preheat your oven to 400°F (200°C).
- Melt the butter in a small saucepan over low heat. Stir in the minced garlic, salt, black pepper, and Italian seasoning.
- Arrange the chicken breasts and diced potatoes on a large sheet pan. Drizzle with olive oil and season with salt and pepper.
- Pour the garlic butter mixture over the chicken and potatoes, coating well.
- Roast in the preheated oven for 25-30 minutes until the chicken is cooked and potatoes are tender.
- Stir in the mixed vegetables halfway through cooking.
- Remove from the oven and let rest for a few minutes before serving.
