Ingredients

  • 2 acorn squashes
  • 3 tablespoons olive oil
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Carefully cut each acorn squash in half and scoop out the seeds.
  3. In a mixing bowl, combine the olive oil, grated Parmesan, thyme, rosemary, salt, and pepper.
  4. Brush the cut sides of each squash half generously with the herb mixture.
  5. Place the squash halves cut-side down on a baking sheet.
