  • 2 tablespoons butter
  • 2 teaspoons garam masala
  • 1 teaspoon cumin
  • Salt to taste
  • Fresh cilantro for garnish

Instructions

  1. Marinate the Chicken: Combine the chicken pieces with yogurt, minced garlic, grated ginger, garam masala, cumin, and salt in a bowl. Let it marinate in the refrigerator for at least one hour.
  2. Sauté Onions: In a large pot, melt the butter over medium heat. Add the sliced onions and sauté until they turn golden brown, about 8-10 minutes.
  3. Cook the Chicken: Add the marinated chicken to the pot and cook until it turns nicely browned, stirring occasionally.
  4. Add Tomatoes: Toss in the chopped tomatoes and cook until they soften and break down, about 5 minutes.
  5. Prepare the Rice: In a separate pot, cook the basmati rice until it’s about 70% done. Drain it well and set it aside for layering.
  6. Layer the Dish: In the same pot with the chicken, layer the partially cooked rice on top. Pour in the heavy cream and gently mix without disturbing the layers too much. Cover the pot.
  7. Final Cooking: Cook on low heat for 20-30 minutes, allowing the rice to finish cooking and absorb all the delightful flavors.
  8. Garnish and Serve: Once cooked, remove from heat and garnish with fresh cilantro before serving hot.

Marinate overnight for more robust flavors. Be cautious not to overcook the rice; it should be firm in the initial cooking.
