Description

A delightful dessert that blends the tartness of rhubarb with creamy sweetness, perfect for any occasion.


Ingredients

  • 2 cups chopped rhubarb
  • 1 cup granulated sugar
  • 2 tbsp cornstarch
  • 1 tsp vanilla extract
  • 8 oz cream cheese, softened
  • 1 cup powdered sugar
  • 1 cup butter, melted
  • 1 cup all-purpose flour
  • 1 cup rolled oats
  • 1/2 cup brown sugar

Instructions

  1. Preheat your oven to 350°F and prepare a 9×13-inch baking dish by greasing it lightly.
  2. Combine the all-purpose flour, rolled oats, brown sugar, and melted butter in a mixing bowl. Mix until crumbly.
  3. Press the mixture firmly into the prepared baking dish, creating an even layer. Bake for 15 minutes.
  4. Cook the chopped rhubarb, granulated sugar, and cornstarch in a saucepan over medium heat until thickened, then add in the vanilla extract.
  5. Spread the rhubarb mixture over the baked crust and return to the oven for an additional 10-15 minutes.
  6. Beat together the cream cheese, powdered sugar, and remaining vanilla in another bowl until smooth and creamy.
  7. Once the bars have cooled completely, spread the cream cheese mixture over the top. Chill in the refrigerator for at least 2 hours.
  8. Cut into squares and serve chilled.

Notes

Store leftovers in an airtight container in the refrigerator for up to five days. These bars can also be frozen individually for future enjoyment.
