Delightful pancakes with a rich red color, topped with cream cheese glaze – perfect for brunch or special occasions.
Ingredients
Scale
- 1 cup all-purpose flour
- 1 tablespoon cocoa powder
- 1 tablespoon sugar
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 large egg
- 1 cup buttermilk
- 1 tablespoon vegetable oil
- 1 teaspoon vanilla extract
- 1–2 tablespoons red food coloring
- Cream cheese glaze (for serving)
Instructions
- Mix the Dry Ingredients: In a large bowl, whisk together the all-purpose flour, cocoa powder, sugar, baking powder, baking soda, and salt.
- Combine Wet Ingredients: In another bowl, mix the egg, buttermilk, vegetable oil, vanilla extract, and red food coloring until well blended.
- Combine Mixtures: Gradually pour the wet mixture into the dry ingredients, stirring until just combined. Be careful not to overmix; a few lumps are okay.
- Preheat the Pan: Heat a non-stick skillet over medium heat and lightly grease it if necessary.
- Cook the Pancakes: Pour 1/4 cup of batter for each pancake onto the skillet. Cook until bubbles form on the surface, about 2-3 minutes. Flip and cook until golden brown on the other side.
- Serve and Enjoy: Serve warm with a drizzle of cream cheese glaze on top.
Notes
For a healthier option, substitute with whole wheat flour or dairy-free alternatives like almond milk.
