Description

A delightful twist on traditional sushi rolls, featuring layers of red velvet cake and creamy cheesecake filling beautifully rolled and served as a stunning dessert.


Ingredients

  • 1 box red velvet cake mix
  • 3 large eggs
  • ½ cup vegetable oil
  • 1 cup water
  • 1 tsp vanilla extract
  • 8 oz full-fat cream cheese, softened
  • ¼ cup unsalted butter, softened
  • 1 cup powdered sugar
  • 1 tsp vanilla extract
  • ¼ cup chopped pecans (optional)
  • ¼ cup white chocolate, melted
  • 2 tbsp raspberry or strawberry sauce (optional)
  • Powdered sugar, for dusting

Instructions

  1. Preheat your oven to 350°F (177°C).
  2. Line a 9×13-inch sheet pan with parchment paper and lightly grease it.
  3. Combine the red velvet cake mix, eggs, vegetable oil, water, and vanilla in a mixing bowl and whisk until smooth.
  4. Pour the mixture into the prepared pan, spreading it evenly.
  5. Bake for 14-16 minutes, then let it cool for about 5 minutes.
  6. Carefully roll the cake using the parchment paper into a log and let it cool completely.
  7. Beat together the softened cream cheese and butter until smooth in a medium bowl.
  8. Gradually mix in the powdered sugar and vanilla, beating until fluffy.
  9. If desired, fold in the chopped pecans.
  10. Unroll the cooled cake carefully.
  11. Spread the cream cheese filling evenly over the surface.
  12. Roll the cake tightly again using the parchment or plastic wrap.
  13. Wrap it up and chill in the refrigerator for at least 1 hour to set.
  14. Once chilled, slice the rolled cake into 1-inch pieces.
  15. Drizzle with melted white chocolate and raspberry sauce for a pop of flavor.
  16. Dust with powdered sugar before serving.

Notes

For a lighter option, substitute full-fat cream cheese with a reduced-fat version. Feel free to swap pecans for walnuts or leave them out entirely.
