- 1 box red velvet cake mix
- 3 large eggs
- ½ cup vegetable oil
- 1 cup water
- 1 tsp vanilla extract
- 8 oz full-fat cream cheese, softened
- ¼ cup unsalted butter, softened
- 1 cup powdered sugar
- 1 tsp vanilla extract
- ¼ cup chopped pecans (optional)
- ¼ cup white chocolate, melted
- 2 tbsp raspberry or strawberry sauce (optional)
- Powdered sugar, for dusting
Instructions
- Preheat your oven to 350°F (177°C).
- Line a 9×13-inch sheet pan with parchment paper and lightly grease it.
- Combine the red velvet cake mix, eggs, vegetable oil, water, and vanilla in a mixing bowl and whisk until smooth.
- Pour the mixture into the prepared pan, spreading it evenly.
- Bake for 14-16 minutes, then let it cool for about 5 minutes.
- Carefully roll the cake using the parchment paper into a log and let it cool completely.
- Beat together the softened cream cheese and butter until smooth in a medium bowl.
- Gradually mix in the powdered sugar and vanilla, beating until fluffy.
- If desired, fold in the chopped pecans.
- Unroll the cooled cake carefully.
- Spread the cream cheese filling evenly over the surface.
- Roll the cake tightly again using the parchment or plastic wrap.
- Wrap it up and chill in the refrigerator for at least 1 hour to set.
- Once chilled, slice the rolled cake into 1-inch pieces.
- Drizzle with melted white chocolate and raspberry sauce for a pop of flavor.
- Dust with powdered sugar before serving.
Notes
For a lighter option, substitute full-fat cream cheese with a reduced-fat version. Feel free to swap pecans for walnuts or leave them out entirely.
