- 18 ounces sweetened red bean paste
- 1 tablespoon sesame seeds
- 3 cups bread flour
- 1/4 cup sugar
- 1/2 teaspoon salt
- 1 teaspoon instant yeast
- 1 tablespoon milk powder (optional)
- 1 cup whole milk (warm)
- 1/3 cup heavy cream (warm)
- 1 egg
- 1 egg yolk
- 1 tablespoon whole milk
Instructions
- Make the dough: In a stand mixer with a dough hook, combine the bread flour, sugar, salt, instant yeast, and milk powder. Mix on low speed. Gradually add the warm milk, heavy cream, and egg. Knead for about 10 minutes. The dough will be tacky; resist the urge to add more flour. Cover and let it rest for 120 minutes or until doubled in size.
- Portion the dough: Lightly flour a clean surface and divide the dough into 9 equal pieces. Shape each piece into a ball by tucking and pinching the sides towards the center, then cover loosely with plastic wrap to prevent drying.
- Form the buns: Stretch each dough ball into a 4-inch circle, ensuring the center is slightly thicker. Add 1/4 cup of red bean paste in the middle, gather the edges over the filling, and pinch to seal. Roll the bun in your hands to smooth the seam, placing the seam side down on a parchment-lined baking sheet.
- Optional flower shape: Dust your hands with a little flour and gently flatten the buns. Use scissors to make 5 small slits on the top.
- Second rise: Allow the buns to rest in a warm area for 30 to 60 minutes, until they nearly double in size. Meanwhile, preheat your oven to 350°F.
- Egg wash and bake: Mix the egg yolk with a bit of milk, then brush this mixture over the buns. Sprinkle sesame seeds on top and bake for about 20 minutes until golden brown. Serve warm for the best experience.
