- 1 cup finely ground walnuts
- 4 large eggs, separated
- 1 cup granulated sugar
- 1 teaspoon vanilla extract
- 1/2 cup all-purpose flour
- 1/2 teaspoon baking powder
- 1 cup heavy cream
- 2 tablespoons strong, cooled coffee
- 1 tablespoon powdered sugar (for the whipped cream)
- Optional: cocoa powder for dusting
Instructions
- Preheat the oven to 350°F (175°C) and grease a round cake pan.
- Beat the egg yolks and granulated sugar together in a mixing bowl until pale and creamy. Stir in the vanilla extract.
- Fold in the ground walnuts, flour, and baking powder until well mixed.
- Beat the egg whites in a separate bowl until stiff peaks form, then carefully fold into the walnut mixture.
- Pour the batter into the prepared pan and bake for 25-30 minutes until a toothpick inserted comes out clean. Allow to cool completely.
- Whip the heavy cream with powdered sugar and coffee until soft peaks form.
- Slice the cooled torte into layers and spread the cream between each layer.
- Cover the torte with remaining whipped cream and dust with cocoa powder if desired.
- Refrigerate for at least 2 hours before serving to meld flavors.
Notes
Chilling the torte allows flavors to develop. Use room temperature eggs for a lighter batter.
