- ½ cup shelled pistachios, finely ground

Instructions
- Bloom the gelatin: In a small bowl, sprinkle the gelatin over the cold water and let it sit for about 5 minutes until it thickens.
- Combine ingredients: In a saucepan over medium heat, mix the heavy cream, whole milk, sugar, ground pistachios, vanilla extract, and salt. Stir occasionally until the sugar dissolves and the mixture is steaming, but be careful not to boil it.
- Dissolve the gelatin: Remove the saucepan from heat. Add the bloomed gelatin to the warm mixture and stir well until it’s fully dissolved.
- Strain the mixture: Using a fine-mesh sieve, pour the mixture into a bowl to catch any bits of pistachio for a silky smooth texture.
- Chill: Divide the mixture into ramekins or glasses. Let them cool slightly at room temperature, then refrigerate for at least 240 minutes or until fully set.
- Serve it up: You can serve it directly from the ramekins or gently unmold onto plates. Garnish with crushed pistachios, fresh berries, or a drizzle of honey for an extra touch.
Notes
For a dairy-free option, coconut milk can be used as a substitute for heavy cream and milk.
