Ingredients

  • 1 packet raspberry or strawberry jelly crystals
  • 1 cup boiling water
  • 1 tablespoon gelatin or 1 tablespoon agar agar (for a vegan option)
  • 1 can sweetened condensed milk
  • 2 cups desiccated coconut (plus extra for topping)
  • 2 teaspoons vanilla extract
  • 2 to 3 drops pink food coloring (optional)

Instructions

  1. Dissolve the jelly crystals in 1 cup of boiling water. Stir until fully dissolved.
  2. Pour the mixture into a lined square baking dish and let it refrigerate until it’s completely set.
  3. Bloom the gelatin or agar agar by stirring it in a small bowl with a few tablespoons of boiling water. Mix until it dissolves completely.
  4. Combine sweetened condensed milk, desiccated coconut, the dissolved gelatin mixture, vanilla extract, and pink food coloring in a mixing bowl. Mix well until fully combined.
  5. Spread the coconut mixture evenly over the jelled base, smoothing out the top.
  6. Place the dish back in the refrigerator for at least 120 minutes or until the layers are firm and set.
  7. Sprinkle extra desiccated coconut generously over the top before serving.
  8. Use a hot, clean knife to slice the bars into squares. Serve chilled.
