Instructions
- Preheat your oven to 350°F (180°C) and line your baking trays with parchment paper.
- Cream together the softened butter and granulated sugar until light and fluffy, about 2-3 minutes.
- Beat in the egg and vanilla extract, mixing well until incorporated.
- Whisk together the all-purpose flour, baking soda, and salt in a separate bowl.
- Gradually mix the dry ingredients into the wet mixture until just combined.
- Scoop about 2 tablespoons of the dough onto the prepared baking trays, spacing them about 2 inches apart.
- Press a pineapple ring onto each mound of cookie dough, flattening it slightly.
- Sprinkle a bit of granulated sugar over the pineapple tops for extra sweetness.
- Bake for 11-13 minutes, or until the cookies are golden brown around the edges and soft in the center.
- Let the cookies cool on the baking tray for a few minutes before transferring them to a wire rack.
Notes
For chewier cookies, chill the dough for about 30 minutes before scooping. Ensure the pineapple is well-drained to avoid sogginess.
