Instructions

  1. Preheat your oven to 350°F (180°C) and line your baking trays with parchment paper.
  2. Cream together the softened butter and granulated sugar until light and fluffy, about 2-3 minutes.
  3. Beat in the egg and vanilla extract, mixing well until incorporated.
  4. Whisk together the all-purpose flour, baking soda, and salt in a separate bowl.
  5. Gradually mix the dry ingredients into the wet mixture until just combined.
  6. Scoop about 2 tablespoons of the dough onto the prepared baking trays, spacing them about 2 inches apart.
  7. Press a pineapple ring onto each mound of cookie dough, flattening it slightly.
  8. Sprinkle a bit of granulated sugar over the pineapple tops for extra sweetness.
  9. Bake for 11-13 minutes, or until the cookies are golden brown around the edges and soft in the center.
  10. Let the cookies cool on the baking tray for a few minutes before transferring them to a wire rack.
