Description

A flavorful vegan dish combining sweet pineapple and savory tofu in a rich teriyaki sauce, perfect for weeknight dinners or special gatherings.


Ingredients

  • 14 oz extra-firm tofu, pressed and cubed into 1-inch pieces
  • 1 cup fresh pineapple chunks (or well-drained canned)
  • 12 tablespoons vegetable oil for cooking
  • 1/4 cup soy sauce or tamari (preferably low-sodium)
  • 2 tablespoons real maple syrup
  • 1 tablespoon rice vinegar
  • 1 teaspoon fresh ginger, minced
  • 2 large cloves garlic, minced
  • 1 tablespoon cornstarch
  • 2 tablespoons cold water
  • Cooked white or brown rice (jasmine rice recommended)
  • Sesame seeds for garnish
  • Sliced green onions for garnish
  • Optional: red pepper flakes for heat

Instructions

  1. Prepare the sauce: In a medium bowl, whisk together soy sauce, maple syrup, rice vinegar, minced ginger, and garlic. Set aside.
  2. Make the cornstarch slurry: In a small bowl, mix cornstarch with cold water until smooth.
  3. Cook the tofu: Heat vegetable oil in a large pan over medium heat. Add pressed, cubed tofu in a single layer and cook for 8-10 minutes until golden brown, turning occasionally.
  4. Add the pineapple: Toss pineapple chunks into the pan with tofu, cooking for about 2 minutes until warmed through.
  5. Incorporate the teriyaki sauce: Pour the teriyaki sauce over the tofu and pineapple, stirring to coat. Let it bubble and reduce for about 1 minute.
  6. Add the cornstarch slurry: Drizzle it over the tofu and pineapple, stirring gently until the sauce thickens and becomes glossy, about 1-2 minutes. Remove from heat.
  7. Serve it up: Spoon over rice and garnish with sesame seeds and sliced green onions.

Notes

For best texture, press tofu for at least 15 minutes. Use fresh pineapple for better flavor when possible.
