Ingredients

- 2 cups crushed pineapple, drained
- 1 cup all-purpose flour
- 1/2 cup brown sugar
- 1/2 cup granulated sugar
- 1/2 cup butter, melted
- 1/2 cup oats
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1 teaspoon vanilla extract
- 2 eggs
Instructions
- Preheat your oven to 350°F (175°C) and grease your baking dish.
- In a mixing bowl, combine the melted butter, brown sugar, granulated sugar, and vanilla extract until smooth.
- Add the eggs one at a time, mixing well after each addition.
- In another bowl, whisk together the flour, baking powder, and salt. Gradually mix this dry blend into the wet ingredients until just combined.
- Gently fold in the crushed pineapple.
- Pour your mixture into the prepped baking dish.
- Prepare the crumble topping by mixing the oats, flour, brown sugar, and melted butter together until crumbly, then sprinkle it evenly over the top.
- Bake for 30-35 minutes or until the top is golden and a toothpick inserted in the center comes out clean.
- Allow to cool before cutting into bars and serve!
Notes
Best enjoyed warm with a scoop of ice cream or a dollop of whipped cream.
