1 lb ground beef
1/2 lb ground pork
1 onion, finely chopped
1 bell pepper, finely chopped
2 cloves garlic, minced
1/2 cup breadcrumbs
1/4 cup milk
1 egg
1 tsp salt
1/2 tsp black pepper
1 tsp Worcestershire sauce
1 tsp Italian seasoning
1 cup provolone cheese, shredded
1/2 cup cheddar cheese, shredded
1/4 cup roasted red peppers, sliced
1 tbsp olive oil
Instructions
- Preheat the oven to 375°F (190°C).
- In a large bowl, combine the ground beef, ground pork, onion, bell pepper, garlic, breadcrumbs, milk, egg, salt, pepper, Worcestershire sauce, and Italian seasoning. Mix until well combined.
- Place the meat mixture into a loaf pan and mold it into a loaf shape.
- Bake the meatloaf for 45-50 minutes or until it reaches an internal temperature of 160°F (71°C).
- In the last 5 minutes of baking, top the meatloaf with provolone and cheddar cheese, then return it to the oven to melt the cheese.
- Drizzle with olive oil and sprinkle roasted red peppers over the melted cheese.
- Allow the meatloaf to rest for 10 minutes before slicing and serving.
