- 1 lb ground beef
- 1 cup carrots, diced
- 1 cup peas
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups beef broth
- 2 cups potatoes, diced
- 1 tsp thyme
- 1 tsp rosemary
- 1 pie crust (top and bottom)
- Salt and pepper to taste
Instructions
- Preheat your oven to 425°F (220°C).
- Cook the ground beef in a large skillet over medium heat until browned, draining excess fat.
- Add the chopped onion and minced garlic, cooking until softened.
- Stir in the carrots, peas, potatoes, beef broth, thyme, rosemary, salt, and pepper, simmering for 10-15 minutes.
- Pour the mixture into a pie dish lined with one pie crust.
- Top with the second crust, sealing edges and cutting slits for steam to escape.
- Bake for 25-30 minutes, until golden brown.
- Let cool for a few minutes before serving.
Notes
For an extra layer of flavor, sauté your vegetables in the beef fat left in the skillet after browning the meat. Don’t skip the seasoning!
