Description

A comforting beef pot pie with a flaky crust encasing a savory blend of ground beef and vegetables, perfect for family gatherings.


Ingredients

Scale
  • 1 lb ground beef
  • 1 cup carrots, diced
  • 1 cup peas
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups beef broth
  • 2 cups potatoes, diced
  • 1 tsp thyme
  • 1 tsp rosemary
  • 1 pie crust (top and bottom)
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Cook the ground beef in a large skillet over medium heat until browned, draining excess fat.
  3. Add the chopped onion and minced garlic, cooking until softened.
  4. Stir in the carrots, peas, potatoes, beef broth, thyme, rosemary, salt, and pepper, simmering for 10-15 minutes.
  5. Pour the mixture into a pie dish lined with one pie crust.
  6. Top with the second crust, sealing edges and cutting slits for steam to escape.
  7. Bake for 25-30 minutes, until golden brown.
  8. Let cool for a few minutes before serving.

Notes

For an extra layer of flavor, sauté your vegetables in the beef fat left in the skillet after browning the meat. Don’t skip the seasoning!
