Description

A creamy and dreamy cheesecake inspired by the classic peanut butter and jelly sandwich.


Ingredients

  • 1 cup graham cracker crumbs
  • 1/4 cup sugar
  • 1/2 cup unsalted butter, melted
  • 16 oz cream cheese, softened to room temperature
  • 1 cup creamy peanut butter
  • 1 cup powdered sugar
  • 1 tsp vanilla extract
  • 1 cup whipped cream (store-bought or homemade)
  • 1/2 cup jelly or jam (strawberry or grape)
  • Peanut butter for drizzling (optional)

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. Combine the graham cracker crumbs, sugar, and melted butter in a mixing bowl. Mix until well incorporated.
  3. Press this mixture into the bottom of a springform pan to form an even crust.
  4. Beat the softened cream cheese, peanut butter, powdered sugar, and vanilla extract in a large mixing bowl until silky smooth.
  5. Fold in the whipped cream until well combined.
  6. Pour the peanut butter mixture over the crust, smoothing the top with a spatula.
  7. Drop spoonfuls of jelly onto the mixture and gently swirl with a knife.
  8. Bake for about 50 minutes, or until the center is set and slightly jiggly.
  9. Cool before refrigerating for a minimum of 4 hours (or overnight).
  10. Drizzle with peanut butter before serving. Enjoy chilled!

Notes

For best texture, use room temperature cream cheese. You can experiment with different nut butters or jams for variation.
