- 1 ½ cups sugar
- 1 teaspoon pure vanilla extract
- 2 large eggs (room temperature)
- 2 cups creamy peanut butter
- 3 cups flour
- 1 teaspoon baking powder
- 2 cups strawberry jam
Instructions
- Preheat your oven to 350°F (175°C) and prepare a 9×13-inch baking dish by lining it with parchment paper, allowing edges to hang over.
- Cream together the softened butter, creamy peanut butter, and sugar until light and fluffy (about 3-4 minutes).
- Add each egg one at a time, mixing well after each addition, then stir in the pure vanilla extract.
- Whisk together the flour and baking powder in a separate bowl. Gradually add this dry mixture to the wet ingredients, stirring until a dough forms.
- Press about two-thirds of the dough evenly into the bottom of the prepared baking dish to create the base layer.
- Spread the strawberry jam evenly across the base layer, making sure to leave space near the edges.
- Crumble the remaining dough over the jam layer to create a textured topping.
- Bake for 30-35 minutes or until the top is light golden brown.
- Cool completely in the pan. Use the parchment overhang to lift the bars out and cut them into squares.
Notes
For a fun twist, dust with powdered sugar or drizzle with chocolate. Store in an airtight container for up to 3 days.
