Ingredients

  • 1 ½ cups sugar
  • 1 teaspoon pure vanilla extract
  • 2 large eggs (room temperature)
  • 2 cups creamy peanut butter
  • 3 cups flour
  • 1 teaspoon baking powder
  • 2 cups strawberry jam

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a 9×13-inch baking dish by lining it with parchment paper, allowing edges to hang over.
  2. Cream together the softened butter, creamy peanut butter, and sugar until light and fluffy (about 3-4 minutes).
  3. Add each egg one at a time, mixing well after each addition, then stir in the pure vanilla extract.
  4. Whisk together the flour and baking powder in a separate bowl. Gradually add this dry mixture to the wet ingredients, stirring until a dough forms.
  5. Press about two-thirds of the dough evenly into the bottom of the prepared baking dish to create the base layer.
  6. Spread the strawberry jam evenly across the base layer, making sure to leave space near the edges.
  7. Crumble the remaining dough over the jam layer to create a textured topping.
  8. Bake for 30-35 minutes or until the top is light golden brown.
  9. Cool completely in the pan. Use the parchment overhang to lift the bars out and cut them into squares.

Notes

For a fun twist, dust with powdered sugar or drizzle with chocolate. Store in an airtight container for up to 3 days.
